We’re big fans of cocktails and mocktails in our house — no drink is complete without a paper umbrella and a bit of over-the-top decoration!

This Lime & Mint Mocktail is perfect for long, lazy summer days in the sunshine. It’s light, refreshing, and so easy to make you’ll have it on repeat all season.ur business and your dreams. You can build something that lets you do both. You don’t have to pick one thing. Here’s what you’ll need:

  • Fresh mint

  • Lime cordial (or fresh lime juice + a drizzle of honey or maple syrup)

  • Sparkling water

  • A highball glass

  • Lots of ice

Method:

  1. Fill your glass about halfway with ice.

  2. Rinse the mint, then gently bash it with a rolling pin or something sturdy — bruising the leaves helps release that fresh, minty flavour. Add to the glass.

  3. Pour in your lime cordial (or your fresh lime juice + sweetener mix) to about ¼ of the glass.

  4. Top up with sparkling water right to the rim.

  5. Give it a stir, pop in a straw, and enjoy!

Bonus points for cocktail umbrellas, lime slices, or even a sprig of extra mint on top.

It’s zingy, fizzy, and wonderfully easy. The kind of drink that makes everything feel just a little bit more like summer.

(And feel free to mix up the recipe. A splash of elderflower cordial works well in this drink, or add a measure (or two) of gin, vodka or white rum to make this mocktail, a cocktail).
